Holiday Finger Food: Ways to Transform Christmas Remains into NYE Appetizers
What kinds of canapes can I prepare for New Year’s Eve using my Christmas leftovers that will still seem festive?
Party snacks needn't be elaborate, so New Year's presents a perfect opportunity to clear the decks. The main guideline is to stick to items to just one bite—no one wants to handle a fork. Guests just want a comforting taste of comfort food with a luxurious touch.
If you have a bit of smoked salmon left, layer it on mini pancakes and crown it with lumpfish caviar. Mini fishcakes are also just the ticket: Whether you've got leftover smoked haddock or hot smoked salmon, mix it through creamy potatoes, blend with fresh herbs, citrus, and caramelized onions, then coat in panko and deep-fry.
You could also have a ball with Spanish croquettes. Prepare the white sauce up to days ahead, then use remaining pork, chicken, or mushrooms for the interior. Whizz old bread into crumbs to cover them, then cook until crisp. Savoury pastry mixtures are another natural home for those crumbs, or use them as a coating for chicken pieces. For flavour, just add a bit of citrus zest and thyme, and they'll sing so much more. As an aside, buttery pastries make excellent coatings, too.
One favourite thing at this time of year is a leftovers sandwich, and that doesn't have to stop after Boxing Day. Place some holiday meats in an sealed tub and store in the freezer. While you're at it, reserve some berry relish and honey ham glaze in the refrigerator. When needed, thaw the meat, then pop it in a preheated oven with the reserved glaze for a short time. Cool and cut into thin pieces, then lay on top of some artisan bread and assemble mini sandwiches with lots of cranberry sauce. Cut into small squares for a winner.
Leftover turkey, meanwhile, could be turned into a zingy salad. There’s always a bit of dark meat left over, and it's perfect for something full of flavour. Shred the meat, then fry it slowly in a pan, and toss with remaining sauce thinned with citrus juice, a dash of soy sauce and a little spicy oil. Finish with chopped herbs and some sliced spring onion, and serve in little gem leaves.
Revamping Leftover Vegetables
Veg, meanwhile, can be dressed up and ready to party with a big batch of fried potato cake. Combine all your leftover veg with herbs, then add salt and pepper and incorporate a binding agent. Cut out portions to about the size of blinis, then keep in the icebox. Reheat in a hot oven for a few minutes and top with your choice of topping—perhaps sliced beef and grated horseradish. A word to the wise, though: set some aside for a late breakfast the next day.
